Well…. Our very first Mary Beth and Rick “What’s Cookin” show is over and what fun we had. We hope you enjoyed it too! Here’s the complete recipe that we shared. Minnesota Wild Rice, Swedish Meatballs
Meatballs
1 Cup cooked wild rice
1 lb meatloaf mix
¼ cup whole milk
1 egg
¼ cup finely chopped onion
1 clove garlic, minced
½ tsp salt
¼ tsp pepper
Dash nutmeg
Dash allspice
Dash cayenne
Sauce
4 Tbsp butter
6 Tbsp flour
3 ½ cups beef broth
½ cup sour cream
1 tsp Dijon mustard
1 tsp Worchester sauce
Salt and pepper to taste
Serve with Lingonberry preserves
Instructions
- Cook wild rice according to directions on the package and cool. Heat oven to 375* degrees.
- While rice is cooling, mix together all other ingredients. When rice is cool, mix into meat mixture.
- Roll into 1 inch balls and bake on greased sheet pan for 10 minutes.
- In a heavy gauged sauce pot, melt butter and add flour when melted. Cook until it pulls from pan.
- Add half of the beef broth and simmer until it starts to thicken and then slowly add remainder of the beef broth. Simmer until there is no floury texture. Add sour cream, Worchester sauce, and Dijon mustard…mix well.
- Add salt and pepper to taste.
- Add meatballs to sauce and simmer for 10 minutes. Keep warm until ready to serve.
Makes 26 meatballs and 4 ½ cups of sauce
