Toasted Brown Sugar Cookies

I love just the changing of the seasons - most specifically the transition of summer into fall. Here on Josie’s farm you can see the change happen in the leaves on the trees that line the driveway, the stalks of corn in the fields, and the cooler air that blows through the hills.

 

Something too about this time of year inspires me to experiment with baking, it’s finally cool enough to want to turn the oven on, and who can beat the fragrant smells of vanilla, cinnamon, and brown sugar wafting through the house?

 

This week I found myself so inspired by the scent of Toasted Brown Sugar, which we just introduced in our 19 Ounce Body Butter as an exclusive scent. (A258166) As with all of our body butter scents, it is hard to choose a favorite, but it IS fun to smell them all when I can!

On a cloudy day while I was back in New York City this week, I looked through the cupboards to see what I had on hand for some yummy cookies. A pinch of cinnamon, a little vanilla extract, and most importantly brown sugar were all accounted for. I used my mom’s simple yet tried-and-true sugar cookie recipe, and just before baking the cookies, I rolled them gently in light brown sugar.

 

Ingredients:

 

2 cups all-purpose flour

1 teaspoon baking soda

1 and 1/2 teaspoons cornstarch

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

3/4 cup unsalted butter, melted

1 packed dark or light brown sugar

1 large egg, room temperature

2 teaspoons vanilla extract

1/3 cup light brown sugar, for rolling

 

Directions:

 

Toss together the flour, baking soda, cornstarch, cinnamon, and salt in a large bowl. Set aside.

 

In a medium size bowl, whisk the melted butter and brown sugar together until no brown sugar lumps remain.

Whisk in the egg.

Finally, whisk in the vanilla.

Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. The dough will be very soft, yet thick.

Cover the dough and chill for 2 hours.

 

Take dough out of the refrigerator and preheat the oven to 325 F.

Pour the light brown sugar into a bowl or onto a plate.

Take 2 Tablespoons of dough and roll into a ball, then roll into the sugar.

Bake for 11-12 minutes.

 

Remove from the oven and allow to cool on the baking sheet for ten minutes before transferring to a wire rack to cool completely.
