Stuffed Tomato!

Tomatoes are in season and so is corn! My recipe for a black bean-summer corn-quinoa stuffed tomato is a great way to enjoy them. 

 

Stuffed Tomato!

 

You will need:

  • Super ripe Tomatoes 
  • My black bean corn salad (recipe below)
  • Prepared quinoa
  • Extra virgin olive oil
  • Limes

 

First thing you need to do is cut the top off the tomatoes, scoop out the inside and add that to the water you'll use to prepare the quinoa. 

 

In a bowl, mix 1-cup of my black bean corn salad to 1/2 cup of prepared quinoa. Stuff the tomatoes with the mixture and serve with a drizzle of extra virgin olive oil and a squeeze of lime juice!

 

My Black Bean-Corn Salad

  • 1-10 ounce can of black beans rinsed
  • 1-cup of cooked summer corn 
  • 1-red bell pepper diced
  • 1-garlic clove minced 
  • 1-tbs of extra virgin olive oil
  • Juice from 1 lime
  • 1-tsp salt
  • 1/2-tsp cracked black pepper
  • 1/2-tsp ground cumin

 

Serve immediately or chill in the fridge for a couple hours.
