Strawberry Parfait

Fall is here but we can’t let go of this classic summer dessert, a Strawberry Parfait, just yet! Grab those fresh strawberries before the air chills, for this easy, sweet treat!

Serving Size: About 4 Large or 6 Small Parfaits

 

Ingredients:

 

Crust

 

2 cups graham cracker crumbs

 

6 tbsp unsalted butter

 

Filling

 

8 oz cream cheese, softened

 

1 ¼ cups heavy whipping cream

 

½ cup powdered sugar

 

4 oz strawberries, chopped

 

Preparation:

 

Crust

 

1). Before measuring, grind the graham crackers into fine crumbs usig a food processor or blender. 

 

2). In a microwave-safe bowl, microwave the butter for 45 to 60 seconds until melted. In a seperate medium-size bowl, pour the melted butter into the crumbs until there are no dry crumbs left.

 

3). Divide the graham cracker crumbs amoung the parfait cups.

 

Filling

 

1). Beat the softened cream cheese with a whisk attachment on medium-high speed for 2 to 3 minutes until it's light and fluffy, and then scrape the sides of the bowl. Reduce the mixer speed to low and slowly add the heavy whipping cream about ¼ cup at a time, allowing the cream cream to turn to a liquid consistency.

 

2). Once all the whipping cream has been added, increase the speed to high until the mixture becomes bubbly. Then slowly add the powered sugar and continue beating until stiff peaks form. Reserve ½ of the filling for garnish.

 

3). Pour the filling into a piping bag. Pipe the filling into the parfaits cups, leaving about ¾ of the cup to add to garnish. Of course, you can also use a spoon to fill the cups instead.

 

4). Sprinkle the chopped strawberries over the filling and garnish with a small swirl of the reserved filling.
