Sharon's Chilli Recipe

When the wind is blowing, and it's chilly outside, I love to settle down with a bowl of something hearty.  This is the time of year when I look forward to simple and delicious comfort food.  I have a quick and easy comfort food meal the whole family will love and it's one of my favorite chilli recipes.

 

This one uses turkey, and has TONS of flavor. To help with the prep, I sometimes grab the squash already peeled, cut, and bagged from the food store. I hope you like it!

INGREDIENTS: 
3 Tbsp olive oil
2 cups butternut squash, peeled and cut into 1/4 inch chunks
3 pounds ground turkey
1/2 cup smokey BBQ sauce (I recommend Corky's!)
1 Tbsp chili powder (more if you like the heat)
1 tsp ground cumin
2 Tbsp Worcestershire sauce
1 onion, minced
2 red peppers, chopped
2 cups dark beer
1 cup tomato sauce
2 cups canned pinto beans, rinsed and drained
2 cups frozen corn, thawed

 


STEPS:
1.   Heat 1 Tbsp of the olive oil in a skillet on medium high, add the squash and sauté. Transfer the squash to your large chili pot.

2.   Add the remaining 2 Tbsp of olive oil to the skillet, and add the turkey. Brown the turkey, and add it to the squash.
3.   Add the rest of the ingredients, except for the corn (we're saving that for last). Stir together, and place the pot over medium heat. Bring to a simmer, and lower the heat. 4.   Cook for 30 minutes, stirring frequently. You can add water, if necessary, to get the texture you want. I usually add about 1/2 a cup of water.

5.   Add the corn, stir, and remove from heat.

 

This batch could serve a party of 15!  If you're not having a party, it's great for leftovers or even to freeze for later.   For serving, I like to add shredded cheese and sour cream, but you can add whatever you like!  Enjoy!
