Peach Party!

There’s nothing I love more than throwing an impromptu get-together. Especially when it’s centered around a beautiful and delicious theme! Josie’s farmhouse is the perfect spot to get friends together in any kind of weather. That’s why Josie and I had such a blast whipping up these delicious peach-themed recipes this February afternoon, and then all snuggling in front of the fire.

 

Just the very mention of ‘peach’ gets me excited for warmer weather and summer cobblers with heaps of vanilla bean ice cream. Today, we wanted to honor this beautiful fruit with two recipes that are perfect for any time of year, and great for entertaining - you can whip them up in a flash!

 

First, let’s start with a delicious Peach Sangria made with rosé wine. The bottle of wine cost just around $12 - so it’s a nice and frugal recipe too!

 

Peach Sangria

 

Ingredients:

 

1 bottle dry rosé wine

1/3 cup brandy

1 cup peach juice

3 sliced peaches

1 cup sliced strawberries

 

Directions:

 

In a big pitcher, toss in your chopped fruit. Over the fruit, pour wine, brandy, and peach juice. Stir, and then let steep in your refrigerator for about an hour to get perfectly chilled, and to infuse this sangria with delicious fresh peach and strawberry flavors!

And, who doesn't love a sweet-and-savory snack to munch on? These Prosciutto and Peach toasts absolutely hit the spot! Fresh cracked pepper adds an extra zing, and mellow basil keeps it light and lively.

 

Peach and Prosciutto Toasts:

 

Ingredients:

 

4 slices ciabatta bread, toasted

1 ripe peach, thinly sliced

1/2 cup ricotta cheese

Freshly ground black pepper

4 thin slices of prosciutto

4 basil leaves, torn into smaller pieces

Honey

Olive Oil, for drizzling

 

Directions:

 

Lightly drizzle olive oil over toasted bread. Top with generous spreads of ricotta, a slice of prosciutto, peach, then basil. Crack fresh pepper over each, then drizzle honey over top.
