Panzerotti

I can't even begin to tell you how much I love these. Dough, tomato sauce, cheese and then fried, what's not to love. Every Friday I would help my grandmother make panzerotti for dinner and this is a tradition she took with her from her home town, in Bari Italy and another tradition I carry on 50 years later. This recipe is a simple on and my favorite way to make them but the filling can be whatever you love.

You will need-

Pizza dough, 1-lb will make 4 Panzerotti

1-lb Mozzarella cheese

2-cups of Tomato sauce

Vegetable oil for frying

 

1-In a heavy skillet or pot pour a couple 

   inches of oil and heat it to 350 degrees, 

   best to use a thermometer and try to 

   maintain that heat.

2-On a floured surface cut the dough into 4 

    pieces and make small pizza's about the 

    size of a salad place 6".

3-On one side put some mozzarella , sauce 

     and dip your fingers in water and wet the 

     edge of the dough, fold in half and press 

     the edges together making sure the 

     Panzerotti is completely sealed.  

4-Now place a couple at a time in the hot oil 

    and fry them. 

5-Flip them and continue to fry them until 

    they are golden brown.

6-Place the fried Panzerotti on a paper lined 

    tray to drain and cool a little before 

    enjoying.

It might take one to get the cook time right so fry one first, test it, then fry the rest. Other fillings can be pretty much anything you love, different cooked meats, cheeses and vegetables!
