Nanny's Stuffing

My Great-Grandmother made this stuffing every Thanksgiving, a tradition we continue to this day!  You can always add a little something to give it your own flair... but she always kept it simple, and tasty!  Enjoy!

Nanny's Stuffing

2 bags soft bread cubes

2 sticks salted butter (I add a little more!)

One large yellow onion, chopped

4 large celery stalks, finely chopped

Salt & Pepper to taste (I use a lot of pepper)

Sauté onion and celery in butter, adding salt and pepper.  Turn off heat. Mix in bread cubes, stirring until cubes have soaked in the butter mixture.  If you can, make this a day ahead of time and refrigerate, stirring every few hours. If time doesn’t allow... it still tastes great done in the same day!

When ready, place mixture in a casserole dish, and bake at 350 degrees for 20-25 minutes.  I usually cover for the first part... uncovering or loosely foiling for the final 5 minutes or so.
