I decided to whip up one of my favorite Summer recipes this weekend... Potato Salad! Sharing the recipe with you, in case you'd like to make my version of it at home. What's your favorite cookout recipe for the Summer?

2.5 pounds red potatoes
4 large eggs
1/4 cup mayo
1 tablespoon mustard
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 cup chopped celery
1/2 cup chopped onion
1/2 cup sweet pickle relish
-cover potatoes with water in large pot and bring to boil, then simmer on medium for 35 minutes. Let cool and cut into 1-inch cubes
-while potatoes cook, boil eggs 9 minutes. Let cool, then peel and chop three of the eggs, and slice the fourth.
-whisk together the mayo, mustard, salt, pepper in large bowl. Add in all but the sliced egg and stir gently.
-Garnish with the sliced egg. Better after chilled for at least an hour!
