First day of fall requires a pumpkin recipe!! Here's my favorite pumpkin bread, for my midnight snack.
My Favorite Pumpkin Bread
Serves 8
Ingredients:
1 cup plain pumpkin
2 eggs
1/2 cup oil
1/2 cup water
1-3/4 cups flour
1-1/2 cups sugar
1 tsp baking soda
3/4 tsp salt
1/4 tsp baking powder
1/2 tsp cloves
1/2 tsp nutmeg
1 tsp cinnamon
1 cup raisins
1 cup walnuts
Preparation:
Preheat oven to 350°F.
Mix pumpkin, eggs, oil, and water. Mix all dry ingredients together and add to pumpkin mixture. Mix until just blended (I mix it by hand for this recipe). Add in raisins and nuts.
Pour into 9" x 5" loaf pan and bake 55–60 minutes or until toothpick comes out clean from center.
