Mary Beth's Menu - Pumped Up Potato Soup

A friend of mine shared a recipe for Potato Soup with me, which I in turn, customized it a a bit. I playfully named it, 'Pumped Up Potato Soup' and I'm sharing the recipe with you below. 

 

I hope you like it as much as my family and I do.

 

 Pumped Up Potato Soup

 

Ingredients:

  • 30 oz. frozen shredded or cubed hash brown potatoes
  • 2 - 14oz cans of chicken broth
  • 1 can - 10.75 oz. cream of chicken soup 
  • 1/2 cup chopped onion
  • 1/3 tsp ground black pepper
  • 8oz. softened cream cheese
  • 1-2 cups frozen corn (depending on how much you like)
  • Optional Garnishes: minced green onion (scallions), shredded cheddar and cooked and crumbled bacon

In a crockpot or Ninja cooker combine potatoes, broth, soup, onion and pepper. 

Cover and cook on low for 5 hours.

Stir in cream cheese and cook for an additional 30 minutes, stirring occassionally until combined.

If the soup needs more liquid, add more chicken broth and/or cream of chicken soup depending on how thick you like your soup. 
Serve with garnish(es) of your choice.
