Mary Beth's Menu - Lemon Cake

Lemon Cake



  • 1 box lemon cake mix

  • 1 package instant lemon pudding

  • 3/4 cup water

  • 3/4 cup vegetable oil

  • 4 eggs

  • 1/2 cup lemon juice OR 1/2 cup orange juice

  • 2 cups powdered sugar


Pre heat oven to 325 degrees.

Combine lemon cake mix, pudding mix, water and oil. Beat with a hand mixer for 5 minutes. Add eggs one at a time beating an additional 5 minutes.

Pour batter into a greased and lightly floured "9 x 13" baking pan. 

Bake for 40 minutes.
Remove from oven and pierce holes on top of cake with a fork.

Mix the fruit juice and powdered sugar. Pour over warm cake.

Enjoy with a glass of milk or hot tea!
