Irish Kerry Cake

Just in time for our Rose of Tralee celebration on September 8th!  This is a version of my Mom’s "Kerry Cake." Perfect for breakfast or coffee break!  

 

Irish Kerry Cake

 

Ingredients:

 

3 Tbsp sugar

1 tsp cinnamon

3/4 cup butter

1/2 cup sugar

3 eggs

1 tsp vanilla

Zest from 1 lemon

1-1/2 cups flour, sifted

1/4 tsp salt

1-1/2 tsp baking powder

3 medium apples, pared and diced

 

Preparation:

Preheat oven to 375°F. In a small bowl, combine the sugar and cinnamon. Set aside.

 

In the bowl of a stand mixer, cream the butter and sugar. Add the eggs, one at a time, followed by the vanilla. Then, stir in the lemon rind.

 

In a separate bowl, combine the flour, salt, and baking powder. Incorporate the dry ingredients into the wet ingredients. Then, gently fold in the apples.

Pour the mixture into a greased loaf pan. Sprinkle the cinnamon-sugar topping on top and bake for 30 minutes.
