I love Semolina pasta and the dough is so easy to make. After making this dough, you might never buy pasta again. If you do not have a pasta machine don't worry because this dough is made by hand and you can roll it out and with a knife, cut your homemade dough into pasta ribbons. As far as what sauce to use on this pasta, I use a simple tomato sauce, butter and sage with some grated Parmesan AND of course a Alfredo sauce would be perfect. You'll need-
2-cups of semolina flour, this is available in most supermarket
2-large eggs whisked
2-tbs of water
3-tbs of olive oil
1/2 tsp of salt
1-Put the flour on a work surface and make a well in the middle.
2-In a bowl mix the water, eggs, salt and olive oil all together.
3-Pour this into the flour well.
4-Using a fork, slowly pull the flour into the egg mixture until it's all mixed together.
5-Using your hands form this into a stiff dough.
6-Knead the dough for 10 minutes until it is elastic. If need be add drops of water
along the way.
7-Form the dough into a ball and wrap it tightly in plastic wrap. Let the dough sit on
the counter in a warm place for 30 minutes.
8-Use a pasta machine to roll out and cut your pasta or roll it out by hand with a
rolling pin on a lightly floured surface and cut into pasta ribbons.
9-As you cut the pasta toss it in some of the flour and form small piles like I did here
and place on a kitchen towel. This way the pasta will not stick together as you
finish the rest of the dough.
9-Cook the pasta in a large pot of briskly salted water for just two minutes.
I always recommend having your sauce ready and heated in a large skillet and then add your pasta directly to the sauce in the skillet. Sauté and toss for just 30 seconds on a medium heat to incorporate the sauce into the pasta and serve immediately.
