Healthy Oatmeal Raisin Cookies

Over the past few months, my husband Ron and I decided together to focus more on our health and in particular healthy eating. We began the Pritikin Diet as a duo and have been feeling great! The diet focuses on eating fruits, vegetables, high-fiber grains, and lean proteins. The holidays are sure to be tempting with their sweets, but there are still so many great options to keep us on track. These oatmeal raisin cookies are the perfect sweet treat to stay healthy this holiday season! I am re-printing this with permission from the Pritikin Diet & Exercise Program.

Ingredients: 

-4 cups oatmeal uncooked

-1/2 cup rasins

-2 tablespoons Splenda

-Cinnamon to taste (about 1/2 to 1 teaspoon)

-4 egg whites

-1/2 teaspoon vanilla extract

-1/2 cup apple sauce (no sugar added varieties)

 

 

Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together in a bowl till everything is uniformly moist.
  3. Drop dough by tablespoonfuls on a greased cookie sheet Bake for 15 minutes.
  4. Cool and serve
