Easy Lemon Cookies

It’s the most sugar-filler time of the year!!! Time for holiday parties and cookie exchanges, and if you are looking for the perfect EASY go to cookie recipe, well you came to the right spot!
Easy Lemon Cookies

1 (18.25 ounce) package of lemon cake mix
2 eggs
1/3 cup vegetable oil
1 teaspoon lemon extract
1/3 cup confectioners’ sugar for decoration

1. Preheat oven to 375F
2. Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended.
3. Drop teaspoonful of dough into a bowl of confectioners’ sugar. Roll them around until they’re lightly covered. Once they’re sugared, place on an ungreased cookie sheet (about 2 inches apart).
4. Bake for 6-9 minutes in the preheated oven. Test with a toothpick to make sure they are baked all the way through. The bottoms will be light brown, and the insides chewy.

LOVE lemon. These are a must try for me. They are so pretty.   I have some California lemons and they are so sweet wondering if they will work instead of extract.

My lemon cake is made with cake mix and 6 real lemons and no sugar and it's a family fav.

Can you substitute a chocolate cake mix and mint extract instead of lemon?

Thank you Alberti.  I really enjoy baking and I will make these for my family this weekend.  Naturally, I will experiment with other flavored cake mixes & extracts ... which is always fun to do. Woman Very Happy

I really miss YHeartU on the 'regular Q' ... I can't get the new show!  A number of posters on the Forum, miss you as well.  Regardless, I am so happy that you are still here.

Alberti,  Thanks for the recipe now here is one for you that is very good and easy.


Date Pecan Balls

1 c. soft butter (I use unsalted)

1/2 c sugar

2 t. vanilla extract

2 c. sifted flour

1 c chopped pecans

1 c chopped dates (I buy the dates that are chopped already but you can chop again if you prefer smaller)


Cream butter & sugar; add vanilla and mix; add flour & mix; add pecans & dates; mix.  Take teaspoon or a little larger of dough and form into the shape of balls.  Refrigerate 1 to 2 hours.  Bake at 350 on greased baking sheet for 20 min.  Cool slightly and then roll into Confectioner's sugar.  Yum yum.  Enjoy.

Another great box cake mix to do this with is Funfetti! No need for extract. I haven't tried rolling it in powdered sugar before baking, but it probably would be wonderful! You could also frost them for a little taste of birthday goodness any time of year.

Tip: To get a flatter cookie top for frosting, simply use the flat bottom of a glass, with a little bit of flour (to prevent sticking to the dough), and press down lightly on the dough balls before baking.

Hi Alberti: I've missed on the overnights somehow. Thanks for the cooky recipe: My mother made a similar recipe over 30 years ago! She used 1 medium tub of cool whip added to the cake recipe along with the confecitoners' sugar.
