Colleen's Three Bean Casserole Recipe

On Memorial Day, the AM Style models shared some of their favorite recipes with me that I, in turn, shared with you. Here is the next recipe from model and friend, Colleen.

Hi everyone, it's me, Colleen and here is the "3 Bean Casserole" (from my Aunt Gerry) that I find delicious!
 
I love how easy this is to make and how easy it is to change the recipe to adapt to any one's food allergies, restrictions or preferences!

 

The original receipe is below, but this last time it was made with Edamame instead of lima beans and bacon instead of turkey bacon.

 

Get creative, have fun and enjoy! It's the perfect side dish to share on Labor Day.
 

Three Bean Casserole

 

  • 4 slices bacon or turkey bacon
  • 1/2 cup brown sugar
  • 1/2 cup catsup
  • 1 medium onion, diced
  • 1 tablespoon green pepper, diced
  • 16 oz. can baked beans
  • 16 oz. can kidney beans, drained
  • 10 ounces frozen lima beans
  • 4-5 slices American cheese (or your favorite cheese!)

Cook lima beans (according to package directions.)

Fry bacon crisp, drain and crumble

In 2 tablespoons of the bacon fat, sauté onions and peppers.

Put three types of beans in a baking dish.

Add crumbled bacon, brown sugar, and catsup.

Mix gently along with onions and peppers to blend.

Arrange slices of cheese on top in a single layer.

Bake at 325 until cheese melts, approximately 20 minutes.
