I apply one coat. I understand  applying a second coat to mean applying  mascara on dry mascara, I never do that.

I have a light complexion with light eyelashes and brows, so I only do one coat.

 

Any more than that and I have 'spider' lashes, which is not a good look, too dark on me.

I see a lot of make-up artists do that and I do too if the mascara looks 'clumpy on the brush.

Depends on what I want my lashed to look like or last. Day to day it's just a swipe to get some color, more if i want some volume or length. I use a primer and many coats for a night out, sometimes even with a topcoat of a waterproof one for staying power.

Two coats. After that it starts getting hard and crunchy and looking unnatural.

I don't know anyone either.  I wear false lashes now but when I did wear mascara, I wore what probably equated to 2.5 or 3 coats.  Two full coats and then would fine tune (with a safety pin to separate and more mascara where needed).

I wouldn't consider one swipe from bottom to top as one coat.  It's hard to explain.  One coat to me was a lot of swipes, getting my lashes as perfect as I could.  That would equate to lots of swipes.  Then let partially or fully dry and go in with another coat.  Sometimes a partial 3rd coat.  Sometimes I used primer, sometimes I didn't and don't recall if that made a difference in how any coats of mascara I used.
