When we were young, I bought a very nice knife set.  I was using the boning knife with chicken breast, then we got boned chicken breasts!!!  Yeah!

 

That knife now opens packages!!!

@ECBG I got a set of GOOD and BIG German knives for Christmas in the early 1990's!  I was so thrilled!  I went to the NYE parties that year with every finger having a band aid--but happy!  I love cooking and kitchen stuff! 

 

I found a gigantic shoulder of beef in the case at Sam's and went home and butchered it on the center island.  Friends were concerned.

 

But I still have those knives and more, have taken a class or two and watched all the folks on tv and am good with them.  I can make a salad in no time and have boned and butterflied leg of lamb when the darned butcher took two days off!  

 

I have several favorite must-have knives.  And hubby knows never to cut cardboard with them!

I don't do much but cut a beef tenderloin into steaks!

@ECBG My mother taught me to cut up a chicken when I was about 13.  And I started cooking lunch in the summers.

When I was cutting veggies or meat, etc,. my mom used to say, "Watch out that knife is sharp. Don't cut yourself". 

 

You don't cut yourself with sharp knives...only dull knives that slip. My knife block from many years ago came with a sharpening steel for that reason.
