Forgot to mention a Juniors Cheesecake for dessert.


 

@luvsbulldogs  The deviled eggs are for DH, he is an egg eater, lol.  The broccoli is for DD, though we will eat it also, not DH's favorite, and the ambrosia is for me, doubt they will eat it, and for me, that will also serve as a desert, in addition to which we have Mrs. Prindables apples, Christmas candy, and cookies in the freezer.

 

I bought the Junior's pumpkin cheesecake for Thanksgiving, and it was good, but not enough pumpkin for DH and DD, pumpkin eaters, lol.  I love cheesecake, and used to make them very often years ago, but I don't keep sweets around here much as DH is not supposed to have them, though he craves them, but maybe for Easter I will make my lemon cheesecake instead of the carrot cake I usually make.

I too love pumpkin but did not care for the Junior's one.  We are originally from NJ and love NY cheesecake.  We only like Junior's plain cheesecake.  I too use to make my own cheesecakes but those days are long gone for me.  I have a vertebrae problem with my back so I try to do as little as possible in the kitchen these days. Nothing beats home made!  You mentioned carrot cake which we love.  Have not made it in years but would love to try your recipe especially if it has pineapple in it. 

Your menu sounds delicious.  Enjoy your Ambrosia.  Have not had it in years but always loved it!   Happy New Year mousie!

When do you and DH go for the eye surgery?  Does he need both eyes done too?

I go on Jan. 19th and DH goes on Jan. 28th.  Yes, DH is to have both eyes done.  It should be very interesting with us going so close together.  I have been on the phone with the eye doctors office for the past 3 days.  My insurance decided not to cover one of the eye drops that I need to use.  They sent me a letter.  I called my doctors office and they told me that they did not understand because it is a generic.  Was on hold with insurance company for way too long so hung up and decided to read the letter again.  The date on the script was as of Nov. 23rd and the letter stated as of Jan. 1st so off I darted to the pharmacy and got it filled......phew!    DH has a different Insurance company so I am hoping that when he goes for the second time that he is covered.
