My favorite day of the week is here.Knowing I only work 1 job today, always brings a smile to my face. I can cook a meal instead of eating a cold sandwhich, I don't have to rush from job to job,and can even get a little laundry done.I know,all sounds so silly,but to me,it puts a extra skip in my step!

From one who worked 60+ hours a week for 20 years before finally being able to retire, I get it! Enjoy your special day, hope it moves slowly for you. The days of having to rush are over for me and it feels very good.

@Luvsmyfam   When you cook your meal today, why don't you cook several meals at the same time?

 

That way you could just heat them up on other days, takes the same amount of time as making a cold sandwich.

 

Roast a chicken and have chicken and gravy for a couple of meals, make hot sliced chicken sandwiches with gravy on top or even a tasty chicken salad.  Leave some meat on the bone, freeze and make chicken noodle soup on another day off. 

 

But while you're cooking chicken in the oven, you can also have pork chops in there or a small beef or pork roast or a little meatloaf. 

 

I double up when I'm using the oven all the time.  Saves energy.

 

Plan ahead, it's so easy to throw a chicken in the oven.  You literally walk away from it and do your laundry or just relax.

 

And a little roast with some carrots, potatoes, onions, etc., will last for several meals down the road.  And so little prep time.  Again, close the oven door and walk away from it for an hour or two.

 

Roasts and whole chickens seem so costly, but really when you think of all the meals you're getting from them, it's so worth it!

 

I love to cook, to me that would be an enjoyable way to spend a day off.  

 

And I don't even eat meat!

As @Lucky Charm mentioned, I always cook to make enough for several meals. I also cook and freeze meals like chili.

I think you mentioned earlier being bored on Sunday (if I remember correctly). Use that day to prep food for the workweek. ☀️ It really helps.

@Luvsmyfam Since retiring, Sunday has become my favorite day because I can fully enjoy it without having to think about getting ready for the upcoming week. Sunday nights have become quite relaxing. I'm glad Thursdays are a little less stressful for you.
