I don't usually follow recipes.  At the beginning of the week I cook about two cups of quinoa or rice, and then I add a handful of it into whatever I'm making for the day.  Since I am home this week, (I went in to school on Mon. & Tues.) I decided to actually cook instead of relying on my Crock Pot lunch warmer to heat up the food.  I also needed to reinvent the roasted broccoli that BF made the night before.

 

Here is what is in it, in order of when I added it to my cast iron skillet:

5 or so baby bella mushrooms, chopped finely

1/2 of a regular carrot, chopped finely

1/3 of a red pepper, chopped finely

5 or so large roasted broccoli florets. coarsely chopped

cooked white rice (about a handful)

cooked yellow split peas (about a handful)

 

 I made a sauce before I started chopping everything.  I added some honey to a ceramic ramekin, then added some GF soy sauce, some rice wine vinegar, some sriracha sauce, and some chicken broth and heated it up in the microwave for about a minute.  When it was hot, I added a ginger tea bag and let it steep.  If I were cooking for BF, I would probably add fresh garlic and just blend everything in the Vitamix until hot, but I was too lazy.  

 

I added the sauce the last minute or so of cooking, when everything was starting to stick to my skillet.

 

It could be made vegan, of course, by swapping chicken broth for veggie broth and swapping out the honey for a different sweetener (to balance out the vinegar).

 

It would be good with cashews or toasted almonds on top, IMO.

My father from Denver just spent two weeks with us and we had a lovely time.

 

I'm enjoying learning about the care of, and horseback riding. 

 

My two week vacation begins on Sat. My family and friends will be traveling together through PA, DC, VA and NC. Lots of fun activities planned!

1. Enjoying our trip in Silverthorne, CO. Friendships made in college have shared many trips before. We also celebrated mom's life and death two days ago on the first anniversary of mom's death. All part of this trip. 

 

2. Cleaned out closets while everyone else shopped. Have so much stuff for Goodwill. Smiley Happy

 

3. My son, DIL and grandson arrived safely in Cayman Islands for another summer vacation. Love hearing their happy voices!
