SLOW-COOKER BEER & MUSTARD MEATBALLS for your Super Bowl Party

Source:  Better Homes & Gardens New Cookbook, 16th Edition

 

Makes 36 meatballs

 

For the meatballs--

2 eggs

1/2 cup fine dry bread crumbs

1/2 cup chopped onion (1 medium)

1/4 cup  milk

1/2 teaspoon salt

1/2 teaspoon black pepper

1 pound ground beef

Four (4-oz each.) uncooked bratwurst links, casings removed.

 

Preheat oven to 375 degrees

In a large bowl, beat eggs with fork. 

Stir in crumbs, onion, milk, salt and pepper

Add bratwurst and ground beef; mix well

Shape mixture into 36 meatballs.

Place meatballs in shallow baking pan.

Bake 25-30 minutes or until cooked through (160 degrees).

Drain off fat.

 

Place meatballs in a 3-1/2 to 4-quart slow cooker.

 

Mix sauce using one 12-oz. bottle of beer, 1/3 cup Dijon mustard and 1/4 cup chopped onion.

 

Pour sauce over meatballs and cook on low for 3-4 hours or high for 1-1/2 to 2 hours.  Serve with toothpicks.

I will definitely give this a try.   We've never been fans of the sweeter cocktail meatballs, but these seem like a great idea!

@novamc1 can you recommend any particular type of beer (regular vs. maybe a dark beer)?

I have no recommendations for type of beer, and neither does the recipe......just would probably not use any type of lite beer.  If you like strong and hearty beers, use those, I suppose.

 

  If a recipe calls for red wine, it seldom says which kind, but I wouldn't use the lower-alcohol or no-alcohol types.
