Need suggestions for broccoli/rice bake to go with salmon.

I'm not going to have a lot of time to cook tomorrow night, so I was going to grill salmon and prepare a broccoli/rice dish ahead of time that DH can pop into the oven.  Does anyone have suggestions for a broccoli/rice  that does not include cheese?

HERE ARE THE EASY STEPS TO MAKE THIS DISH:

  1. sauté the onions and garlic
  2. add the rice and let it cook a bit
  3. add rotisserie chicken, broccoli, and seasonings
  4. continue warming
  5. squeeze lemon over surface
  6. devour

 

I would think rice, broccoli, onions (sauted), add cream of chicken or mushroom soup. Cookall ingredients.  Combine and bake till warm to eat.  Lemon???  might be interesting!

@house_cat I hope you don't mind me sticking my nose in here but I found this recipe when snooping around and thought it may be a good match with grilled salmon:

 

Ingredients:

 

1 bunch broccoli, stems peeled and chopped into bite-size pieces, and heads broken into florets
2 lemons, zested then cut into wedges 
1 tablespoon olive oil 
1 teaspoon black pepper 
2 cups prepared brown rice

 

Tips

Not a fan of broccoli? Try cauliflower, asparagus or Brussels sprouts.

 

Directions

Preheat the oven to 375 degrees Fahrenheit. 
Place the broccoli on a baking sheet lined with parchment. Sprinkle on the lemon zest, olive oil and black pepper, then scatter the lemon wedges on the baking sheet. 
Bake for 20 minutes, stirring halfway, until the broccoli is tender and starting to brown. 
While the broccoli and lemons are cooking, reheat the brown rice. 
Remove the veggies from the oven and transfer the broccoli to a large bowl. Add the rice, then squeeze the lemon wedges over the broccoli and rice, then discard. Toss gently, then serve. 

About 1 1/2 cups per portion.

My family likes a standard broccoli casserole without cheese.

Don't know of one without some creamy cheese in it.

You could easily put cooked rice in this one.

 

Broccoli Corn Bake

Ingredients

  • 1 ½  cups crushed butter-flavored crackers
  • 3 tablespoons butter, melted
  • 2 ½  cups frozen broccoli cuts, thawed
  • 1 can (15-1/4 ounces) whole kernel corn, drained
  • 1 can (14-3/4 ounces) cream-style corn

Directions

  • 1. In a large bowl, combine cracker crumbs and butter; set aside 1/2 cup for topping. Stir in vegetables to the remaining crumb mixture.
  • 2. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with reserved crumb topping. Bake, uncovered, at 350° for 30-35 minutes or until bubbly and top is golden brown.

@house_cat  I'd just make either a nice greens salad or cole slaw to go with. Or I'd fix the broccoli without rice.

Thanks, everyone. I waited as long as I could for suggestions, but finally had to improvise. I will keep these suggestions for next time.  

 

I softened some celery and onions in olive oil and butter and added them to a mixture of cream of mush soup and milk, fresh broccoli and basmati rice.  

When I tasted it ... blech... very bland. I normally do not like cheese with fish, but I added a cup of grated Parmesan and it turned out okay.  I topped it with a mixture of Panko crumbs with some melted butter.  I don't expect it will be spectacular, but it will do for a busy Monday night.
