Layered Coconut Dessert - lilbitmissty
Bottom layer:
1 c. flour
1 stick margarine, melted
1 c. coconut

Press into bottom of 9 x 13 pan and bake at 350 for 25 minutes.

Second layer:
8 oz cream cheese, softened
1 c. powdered sugar
1 c. Cool Whip

Beat together until smooth. Spread on cooled bottom layer.

Third layer:
2 small boxes instant coconut pudding
3 cups milk

Whisk together for 2 minutes. Let set 2 minutes or until soft set. Spread over cream cheese layer.

Top layer:
Cool Whip (I used the remainder from the first Cool Whip tub, plus another 8 oz tub...probably about 12 ounces)

Then take about 3/4 cup coconut, put it in a cast iron skillet dry and heat over medium heat stirring constantly until coconut is toasted. Cool a few minutes in another container (so it doesn't keep cooking). Sprinkle on top and refrigerate. You could also easily throw in some crushed pineapple and rum extract and maybe a little more coconut with the pudding layer and turn it into a pina colada layered dessert.

sunshine45 said: I make this often... especially if I am having a buffet. We call it hot chicken salad. It is definitely delicious and you can experiment using different cheeses or nuts. It is also delicious with corn flakes on top instead of the potato chips! I like to also dust it with paprika for some color on the top. It is a great way to use up a rotisserie chicken also.

lork said: When I make hot chicken salad I don't use any boiled eggs. I do mix in a couple cups of cooked white rice and about a cup of chopped celery. I don't stir in the cheese, I layer it on top of the salad, followed by the crumbled potato chips. This is a really good dish to take to "salad supper" or serve for a spring/summer luncheon.

Bookr said: Hello Lilbitmissty, This is the recipe I use with the exception that I use ground beef instead of the bacon and only 1 t. of vinegar. I'm going to try your way next time I make them especially adding in the hot dogs. I think my husband & son will like them a different way.

NHLady said: Hi lilbitmissty........this sounds just like my mom's recipe except that she placed a whole onion in the center instead of the onion soup mix. I think yours has more flavor so I will be trying it your way. My mom and I always add the hot dogs to it too. Thank you for this great recipe. It is a definite keeper.
