Very Strawberry Salad by LilBitMissty

2 packages of frozen strawberries (10-oz size)
1 can sweetened condensed milk
1 8 oz. container of Cool Whip
1 20 oz. can crushed pineapple with juice
2 & 1/2 cups of colored mini marshmallows
1/2 cup toasted, chopped nuts (optional)

Partially thaw the strawberries.

Using a large bowl, add the strawberries, milk, Cool Whip, pineapple & marshmallows.

Mix well. Cover with plastic wrap and freeze till it is solid.

Remove it from the freezer about an hour before serving, and sprinkle with the nuts if desired.

DiamondGirly, What can I say but your a sweetheart{#emotions_dlg.rolleyes}{#emotions_dlg.rolleyes} Your just one of the nicest people on here!!TY so very much for all your help..Yep she is still posting..I know she has things she is doing so I thought id do this for everyone who might have missed her recipes...she has some really good ones..Id love to do some of ties but i tried that and no one seemed to have any so... I just thought it would be fun!!!

I'm going to have to write them down on a list..so i don't double up.. I'm going to Southern Cal on the 4th so ill be gone that weekend...My daughter is doing her internship there, Maybe i can figure out how they make that fruit pie at the fruit house..or what ever the name is!!!its just delicious..

FRUITY CASSEROLE

1 large orange or 2 small oranges, peeled and thinly sliced
1 stick butter
1/3 cup flour
1/2 cup sugar
Dash salt
1/2 cup coconut
1 can sliced pineapple, halved, reserve juice
1 can pear halves, quartered and drained
1 can peaches, quartered and drained
1 small jar maraschino cherries, reserve juice


Preheat oven to 375 degrees.

Melt butter. Add oranges, flour, sugar, and salt. Cook until thickened and oranges are tender; adding juice from pineapple and cherries as it cooks.
Add coconut.

Arrange drained fruits in large casserole dish. Pour oranges in sauce over other fruits.
Bake 20 minutes.

York Patty Cookies lilbitmissty

1/2 cup butter or margarine
1/4 cup packed brown sugar
1/4 cup powdered sugar
1/4 teaspoon salt
1 egg
2 cups flour (sifted)
1 teaspoon vanilla
1/2 teaspoon almond extract
walnut halves
peppermint coating (see recipe below)
finely ground walnuts

Cream the sugars, butter, and salt in a bowl until light and fluffy. (use a mixer at medium speed). Stir in egg, flour, vanilla and almond extract. Shape balls in one inch balls. Press walnut half in each ball then reshape in a ball. Place balls 1/ 1/2 inches apart on greased cookie sheet. Bake at 350* 12-15 minutes or until golden brown. Remove from cookie sheet and cool on rack..

Peppermint Coating

Mix 12 miniature or 3 large York peppermint patties with two -oz squares semisweet chocolate with 2 tablespoons corn syrup in a small saucepan. Heat until melted. Dip cookies into the peppermint coating and then into the ground walnuts; allow to set on waxed paper.

SPICY SAUSAGE SNACKS
Saythatfast 3 times! lilbitmissty

1 16oz can jellied cranberry sauce
2 Tablespoons spicy brown mustard
1 Teaspoon lemon juice
1 pound cooked smoked sausage
1 20 oz can pineapple chunks..drained
1 large green pepper seeded and cut into 1/2 inch strips

Mix together cranberry sauce. mustard, and lemon juice in a saucepan. Cook stirring constantly over medium heat until smooth. Cut sausage into 1 inch slices and add to the cranberry sauce and cook for 15 minutes. Thread the pineapple, green pepper, and sausage chunks on skewers. Pour sauce into a shallow heatproof serving dish and arrange sausage kabobs in sauce.(I do mine around the edge of a bowl.)

Breakfast Cookies

1 1/4 cups flour
2/3 cup sugar
1/2 cup cereal of your choice..i use grape nut cereal
1 tablespoon baking powder
1 tablespoon grated orange peel
1/2 pound bacon, cooked until crisp
1/2 cup soft butter or margarine
1 egg
2 tablespoons orange juice..thawed undiluted

Preheat oven to 350*, combine flour, sugar, baking powder, add remaining ingredients and mix well. Drop by tablespoon 2 inches apart on an ungreased cookie sheet. Bake 10-12 minutes. Makes about 18 cookies.

LOW CARB CHICKEN IN ONION CREAM GRAVY by lilbitmissty

1 pound boneless chicken breasts cut into halves
olive oil
1/2 stick butter
one large onion
large can chicken broth
poultry seasoning
salt and pepper
one pint heavy cream

Rinse chicken and pat dry sprinkle with poultry seasoning Heat enough olive oil and butter to coat the bottom of a large skillet. On medium heat add chicken to pan and turn to cook just until browned, Season with salt, pepper and more poultry seasoning to cover both sides Add enough broth so that chicken pieces are almost covered Slice one large onion in rings- place over chicken.

Cover and cook over low heat for an hour, turning several times. Remove chicken from broth turn up heat and cook broth until it begins to reduce and thicken Lower heat to medium, add cream until gravy thickens and becomes nice and creamy.

MOZZARELLA MEATLOAF low carb by lilbitmissty

3 eggs, slightly beaten
1/2 cup spicy V-8 juice or tomato sauce (Ibuy the lowest carb I can find)
1/2 tsp. ground oregano
1/2 tsp. salt
1/4 tsp. freshly cracked pepper
1/2 tsp. garlic salt
2 pounds lean ground beef
8 oz. thinly sliced mozzarella cheese, diced (save 2 slices for the topping)
2 tbsp tomato sauce or low carb ketchup
3 tbsp. Parmesan cheese, divided

Preheat oven to 350 degrees. Combine all ingredients except cheeses and 2 Tbsp tomato sauce.

Divide meat mixture in half. Shape half of the meat into a flattened oval in the bottom of a 9 x 13 inch glass dish.

Top with diced cheese; spread to within 1 inch of the edge. Sprinkle with 2 Tbsp of Parmesan cheese. Top with remaining meat mixture; seal edge by pressing together.

Spread top of meat with tomato sauce/ketchup; sprinkle lightly with additional garlic salt, pepper, and salt. Bake 1 hour. Top with sliced cheese, sprinkle with remaining Parmesan cheese, and return to oven until cheese melts. Allow to sit 5 - 10 minutes before slicing.

Pumpkin Whoopie Pies by lilbitmissty

2 eggs
2 cups sugar
1 16 oz can pumpkin
1/2 cup oil
2 1/2 cups unsifted all-purpose flour
1 tsp cinnamon
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp allspice


Cream Cheese Filling
4 oz Cream Cheese
1/4 cup butter or margarine (1/2 stick)
2 cups confectioners' sugar
1 7 -oz. jar Marshmallow Cream

Bring butter to room temperature. In a medium bowl with mixer at low speed, beat butter and cream cheese until mixed. Beat in Marshmallow Cream. Add confectioners' sugar until mixed. Set aside.


Heat oven to 350 F. Grease two large cookie sheets and set aside. In a large bowl with mixer at low speed beat eggs, sugar & pumpkin until mixed. Mix in oil. Gradually beat in remaining dry ingredients. Drop by rounded tablespoons onto cookie sheets. Bake about 10-12 minutes or until top springs back when lightly touched with finger. Remove to wire racks to cool. When cool, use filling and two cakes to make "sandwiches". Makes about 22.

EASY DAY CHICKEN CASSEROLE by lilbitmissty

2 1/2 cups cooked chicken
1 1/2 cups diced celery
1/2 cup sliced almonds
1 cup mayonnaise
1/2 cup grated cheddar cheese
1Tablespoon minced green onion
2 Tablespoons lemon juice
1 small can water chestnuts ..DRAIN 1/2 THE LIQUID
crushed potato chips
grated Parmesan cheese

Mix all the ingredients, except potato chips and Parmesan cheese, together until well blended. Pour in baking dish; top with potato chips and Parmesan cheese.

Bake at 300 degrees until bubbly (about one hour).

Glazed Pork Chops by Lilbitmissty

2 thick pork chops
2 Tablespoons oil
2 green pepper sliced in rings
1 8 ounce can pineapple chunks..drained, reserve juice
2 teaspoons soy sauce
2 Tablespoons cornstarch
1/2 teaspoon ground ginger

Brown pork chops in oil. Place in casserole dish. Arrange pepper rings and pineapple chunks on top of the chops. Combine remaining ingredients. Blend well. Drizzle over chops. Cover and bake at 325* for 1 hour

YOGURT POPSICLES by lilbitmissty

1 quart plain yogurt
6 Tablespoons (1/2 of a small can) frozen orange juice concentrate
1 teaspoon vanilla

Stir all ingredients together. Freeze in popsicle molds or in small paper cups. Place popsicle sticks into small cup molds when partially frozen. Makes 6-8 popsicles.

I also have used frozen grape as well as pineapple concentrated juices.

BAKED HAM WITH CHERRY SAUCE

1 8-10 pound canned ham
2 10-oz. jars apple jelly
2 Tablespoons mustard
2/3 cup pineapple juice
1/4 cup dry white wine
2 21-oz. cans cherry pie filling
1 cup white raisins


Place ham on rack in shallow pan. Bake according to can directions. Remove from pan 30 minutes before baking time is up.

Score top of ham in diamond shapes. Combine jelly and mustard in a medium saucepan. Stir in pineapple juice and wine. Cook while stirring til boiling. Simmer 2-3 minutes.

Pour 1/3 of the glaze over the ham. Return to the oven. Spoon the remaining glaze at two 10 minute intervals.

Bring cherry pie filling and the raisins to a boiling point in saucepan. Stir occasionally. Remove ham and place on serving platter. Add the glaze from the baking pan to the cherry sauce. Bring to a boil and then spoon over the ham. Pass remaining sauce.

COCONUT LAYER CAKE WITH LEMON FILLING lilbitmissty
LEMON FILLING:

Juice and grated rind of 2 lemons
1 cup sugar
2 eggs, beaten
2 Tablespoons butter, melted

When grating rind, take special care not to get the bitter white part.
Put all ingredients in double boiler, stir over simmering water till thickened-15-20 minutes. Chill.
CAKE (makes three 8-inch layers):
6 Tablespoons butter, room temp.
1 1/2 cups sugar
3 eggs, separated
2 1/4 cups flour, sifted
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1 teaspoon vanilla

Preheat oven to 350 degrees F.
Cream butter and sugar. Add egg yolks and beat until thick and lemon-colored.
With a fork, mix together dry ingredients and add them to egg mixture alternately with the milk; stir in vanilla. Fold in stiffly beaten egg whites.
Divide batter between 3 buttered 8=inch cake pans and bake for 20 minutes. Cool completely and remove from pans.

Before frosting cut off rough edges of cake with sharp scissors.

WONDERFUL MARSHMALLOW-LIKE FROSTING:
1/3 cup water
1 cup sugar
1/8 teaspoon cream of tartar
pinch of salt
2 egg whites
1 teaspoon vanilla
sweetened coconut

Stir the water, sugar, cream of tartar and salt together in a small heavy-bottomed pan. Hook a candy thermometer to the edge of the pan and boil without stirring until mixture reaches 240 degrees F.

Meanwhile, beat egg whites until stiff. Pour the 240-degree syrup over the whites in a thin stream, beating constantly until thick and glossy. Stir in vanilla.

TO ASSEMBLE:
Put the chilled lemon filling between cooled layers-try not to let too much of it get out the sides. Frost the cake with the Wonderful Marshmallow-Like Frosting then sprinkle on coconut thickly, gently pressing it into the sides. During this process the cake may try to slip and slide, but just slide it back straight.

I'm enjoying it, too...forgot what I had!! :/ I get so many that it's overwhelming lol.

I am putting these all in one document if you'd like me to Email it to you when I'm literally DONE lol....

All of her recipes sound so yummy! I mostly saved the ones that I thought I could/might make one day. If they seemed like something too difficult (ha!), I probably don't have those!
