Been making these occasionally.  DH loves them.  I love them, and others seem to like them.  Not a health food but good on a cold winter night.  (This is my own improvised recipe, and you might come up with a better version.)

 

Blue and/or yellow corn tortilla chips

1 lb.  lean ground beef

1 envelope of taco seasoning (McCormick or Old El Paso)

1 can Ro-Tel diced tomatoes with green chilies.

1 approx. 10-oz. container of Queso-Melt  premium melting cheese, or other  brand of  "restaurant-style cheese dip" found in the refrigerated cheese aisle.

(I add a little shredded cheddar to the cheese sauce, too).

 

Brown and drain ground beef.  Add taco mix and cook per package directions.

 

Add can of tomatoes to the pan and heat.

 

Spread chips on baking sheet and heat at 375-400 degrees for 5-10 minutes until warm.

 

Put cheese sauce in a microwaveable container (I use a 2-cup Pyrex glass pitcher) and heat per package directions.

 

Dish out some chips onto each person's plate, add some beef /tomato mixture and pour melted cheese sauce over all.

We looooove nachos, and surprisingly I have all those ingredients.  Defenitly going to make these soon. Thank you.

@novamc1...yummmm.  I have a similar thing that I do , but I love the addition of the tomatoes..nice touch.  I am going to try it for the weekend.

This sounds yummy!  I love Mexican food, and this sounds easy but tasty.

 

The only addition would be a margarita!  Ole'!!!!
