Hi All! Since I'm stuck home today because of the snow, I thought I'd do some baking, but I'm limited only to ingredients I already have in the house. I'd like to make my recipe for Almond Pound Cake, but it calls for 8 ounces of cream cheese (the kind that comes in a stick), which I do not have. Do you think I can substitute either Greek Yogurt, or whipped cream cheese, which is what I do have on hand? I'm afraid that these two ingredients would not be "thick" enough and might ruin the consistency of the cake.

I'm no chef but I would be more inclined to substitute butter or margine sticks.

I would use the greek yogurt, as long as it's unsweetened. Regular yogurt can be used as a sub if it is strained first to remove all the liquid. Greek yogurt is already strained and thicker, so I think it would be your best bet. Some of my best recipes have come from being out of a particular ingredient. Necessity is the mother of invention! How about cottage cheese puréed or sour cream or yoghurt strained to remove water.

Go onto the King Arthur Flour website and see if they have a cream cheese substitute tip.

I hardly think for the recipe that you are using there will be a good substitute for cream cheese. It really is the heart of the cake.

I asked Alexa and she said heavy cream is a good sub for cream cheese.

I think the greek yogurt would your best bet. 1cup yogurt for 1 cup cream cheese

i would combine the Greek yogurt with the whipped cream cheese.
