Christmas Bell Salad
1 large each: red, yellow, and green bell pepper, cleaned, seeded & cut into
thin strips
6 green onions, cleaned and minced - use up to 1" of stem
1/4 cup chopped fresh parsley
4 cups fresh spinach
1/2 cup golden raisins
1/2 cup roughly chopped nuts
Dressing:
1/8 cup raspberry vinegar (can substitute red wine vinegar)
1/4 cup extra virgin olive oil
1/4 cup sugar
freshly ground black pepper
1/4 tsp. salt
Directions:
Assemble the pepper strips, onion, parsley, and spinach in a large salad bowl. Mix in the raisins & nuts and toss well.
Whisk the dressing ingredients in a small bowl until well blended.
You can dress the salad and refrigerate it for up to an hour, or dress and toss it just before serving.
Serves 4-6
