CHOCOLATE CHIP MINI-CUPCAKES

Beat together.....

8 oz. cream cheese, softened

1 egg

1/2 cup sugar

pinch of salt

Add to above......1 cup chocolate chips........set mixture aside.

Mix following together*......

1 1/2 cups flour

1 cup sugar

1/4 cup cocoa

1/4 teaspoon salt

1 teaspoon baking soda

1 cup water

1/3 cup oil

1 teaspoon vanilla

* I find it helpful to use a bowl with spout for pouring.

Grease mini-muffin tins and fill 1/3 full with the above chocolate mixture. Put 1 teaspoonful of chocolate chip/cream cheese mixture on top.

Bake at 350 for 15-20 minutes. Recipe will make about 4 dozen. Can freeze.
