Candy Cane Bar Cookies


1 cup butter, melted
1 cup sugar
1 egg, beaten
1/4 tsp. peppermint extract
1/2 tsp. salt
2/3 cup finely crushed mini candy canes (measure after crushing)
6 drops red food color
2 cups flour, packed
3 cups chocolate chips, divided

Place the sugar & egg in a large mixing bowl and beat until uniform color.

Add the peppermint, salt, and crushed candy canes; mix well. Add food coloring.

With mixer on low, mix butter in. Add flour in 1/2 cup increments, beating after each.

Stir in ONE cup of chocolate chips by hand.

Spread the batter into a greased 9 X 13 pan and bake at 350 for 25 minutes, or until firm on top.

Remove the pan from the oven and sprinkle it with the remaining two cups of chocolate chips. Immediately cover with heavy-duty foil or a cookie sheet to keep the heat in. Let sit for three minutes, then remove foil/sheet and spread out the melted chips like frosting.

Cool completely and cut into squares.
