Baked Spinach and Cheddar Casserole

[ Edited ]

8 cups fresh spinach  (I do 8 large hand fulls)

4 cups grated cheddar cheese

1 large onion cut in rounds, and cooked until clear

1 bottle Heinz Chili sauce (not cocktail sauce)

4 Tbsp butter

Preheat to 375 degrees

Rub a 3-4 qt casserole, with the butter (I have a 4 qt covered Corningware casserole)

Steam spinach 5 minutes.

Layer 1/3 of the spinach, then dot 1/3 of the chili sauce, layer 1/3 of the onions, and sprinkle with a cup of grated cheddar.

Repeat two more times, ending with cheddar.

Bake 45 minutes uncovered unless the cheese begins to brown, then cover.

Reheats great!

Is this hot (spicy hot) from chili sauce?  I've never used chili sauce and I don't care for anything spicy hot...

*************************************No, it's not hot.  Anything slightly hot burns me up, and you can only dot it around since it has to cover three layers.  By the time you even it out with a spoon it's ultra thin.

Re: Baked Spinach and Cheddar Casserole

This sounds wonderful!  Thanks for posting.  BTW:  Heinz Chili Sauce is really good in almost everything.  It is not hot, more of a slightly sweet and mild flavor.

There is no fun in doing nothing when you have nothing to do.
