You all are making me hungry! I use a recipe that calls for Vanilla pudding mix - it keeps the pumpkin bread nice and moist! Enjoy your baking and I hope you all have a very Happy Thanksgiving!

@HB glamma, OK it's Friday..here's the Pumpkin bread recipe I told about.
1 3/4 C all-purpose flour
1 1/2 C sugar
1 tsp baking soda
3/4 tsp salt
1/2 tsp freshly grated nutmeg
1/2 tsp ground cinnamon
1 C. pumpkin puree
2 eggs, slightly beaten
1/4 C vegetable oil
4 T. (half stick) butter, melted
Preheat the oven 350 degrees. Lightly grease and flour a 9x5 loaf pan. Sift the flour, sugar, baking soda, salt, nutmeeg, and cinnamon into a medium bowl. Then add the pumpkin, eggs, oil and melted butter. Stir til combined.
Pour batter into the prepared pan and bake until bread is golden on top. Insert sharp knife into center till it comes out clean. 1 hr. 15 min's. Let it cool and turn the loaf out onto a rack.

thank you for taking the time today to post the pumpkin bread recipe. i have a can of pumpkin that i bought for holidays. I will definitely make this

I posted the recipe I use on page 1. It's so yummy. Now I'm hungry for pumpkin bread.

Should these pumpkin bread recipes be mixed by hand, or is this something that can be mixed in a KitchenAid stand mixer?

@DottieBlue, I do it by hand (have some arthritis going on, if that's why you asked). Easy to make and not hard to combine ingredients. Not like real loaves of bread that you knead. Does that help?
