How Do You Season Marinara or Tomato Sauce?

Among others, my ingredient is coriander (ground). I didn't realize this was part of the cilantro plant, which I don't usually cook with.

My 2nd ingredient that's a bit out of the ordinary is tarragon. Both of these seem to take away the acidity of the tomatoes.

I love spices & herbs! What do you all use that compliments tomatoes?
