Health Bread
2 pkgs. active dry yeast
1/2 cup warm water
1 cup oatmeal
2 teaspoons salt
2 tablespoons oil (I use olive)
1 cup raisins
2 3/4 cups boiling water
1 cup bran
3/4 cup molasses
1 cup whole wheat flour
6 - 7 cups white flour (King Arthur)
Soften yeast in warm water. Combine next 6 ingredients; cool to lukewarm. Add softened yeast and molasses. Stir in whole wheat flour and two cups white flour; beat well. Gradually add enough flour to make a soft dough. Turn out on a lightly floured surface (I use the big fix and mix tupperwares for this) knead till smooth. Place in a greased bowl, turning dough once. Cover: let rise in warm place till double, about 1 hour.
Punch down: divide in half. Cover; let rest 10 min. Shape into two loaves. Place in 2 greased 9 1/2X5X3 inch loaf pans. Let rise till double, about another hour. Bake in moderate oven (350) for 55 min.
For convection I bake this at 300 for 45 min.
