Simple and Delicious Pea Salad

There are so many variations on the theme of pea salad. Some have cheese, ranch dressing, peanuts rather than cashews, no onions, etc., etc., but this is our favorite simple version:

Pea Salad

10-oz pkg. small peas, thawed
1/3 c chopped celery
4 green onions, chopped
1 c cashews, chopped
1/2 c sour cream
10 slices bacon, cooked and crunched into small bits
salt and pepper to taste


Micro-cook bacon on rack or paper on High for 8 to 9 minutes.

Drain peas and dry any remaining liquid from them.

Mix bacon with the peas, celery, green onions, crumbled bacon and sour cream.

Refrigerate. Add the cashews immediately before serving. Serves 4-6

That sounds delicious. I already have all of those ingredients on hand, except the cashews, but I wouldn't use them anyway. I do have some fresh pecans that could be chopped and toasted for the top.

The salad is already sweet, and pecans may make it sweeter. The cashews bring a saltiness that is nice, as do peanuts. I think I'd leave them out and maybe double up on the celery, minced small. But, that's just my preference, and yours will probably suit you better. Smile

Yes, I think you're right. Pecans are more for dessert toppings, aren't they? My son loves cashews, but if I keep any in the house I tend to keep eating them. Same thing with peanuts. Now I'm hungry! Thanks for the recipe. I'm going to try it this evening.

Another salad--Shrimp and Pea

Place 1 lb. frozen cooked shrimp and 2 cups frozen peas in colander.

Rinse the colander under cool water till shrimp and peas are thawed.

Drain well and place in large bowl.

Add to that bowl 1/2 cup thinly sliced red onion and 1/4 cup ranch dressing--mix lightly.

Arrange lettuce leaves on 4 plates top with shrimp mixture.

Makes 4 servings :) cb
