There are so many variations on the theme of pea salad. Some have cheese, ranch dressing, peanuts rather than cashews, no onions, etc., etc., but this is our favorite simple version:
10-oz pkg. small peas, thawed
1/3 c chopped celery
4 green onions, chopped
1 c cashews, chopped
1/2 c sour cream
10 slices bacon, cooked and crunched into small bits
salt and pepper to taste
Micro-cook bacon on rack or paper on High for 8 to 9 minutes.
Drain peas and dry any remaining liquid from them.
Mix bacon with the peas, celery, green onions, crumbled bacon and sour cream.
Refrigerate. Add the cashews immediately before serving. Serves 4-6
