Re: Well, now looking into Mediterranean way of eating

I am a big fan of PicSweet I think is the name. I buy four bags of their mixed vegetables (sweet potatoes, Brussels sprout, and cauliflower are my favorite) and toss them in olive or avocado oil with seasoning salt and Cajun spice and roast them at 450 degrees on a large sheet pan.

It makes two large LocknLock containers of vegetables that I use for breakfast as a scrambled egg bowl, sides throughout the day, or a meal in itself. Easy and I cook them once a week or less.

It's a staple of my meal prep.

@Laura14  I will be on the lookout. Thanks.

HealthyEmmie on Youtube is great, she brings her parents along and talks alot about keeping weight off after 50.

I practically live on veggies, 27 years ago I lost well over 100lbs and have never regained it even through menopause. I move daily, exercise, walk, lift and eat whole foods (no red meat or pork, haven't had those in 30 years).

My blood work is perfect, my Dr is always saying "I wish more people would take their health as seriously as you do".

The saturated fats always skew with my body weight and mess up blood #s, I finally got sick of it and cut them out, best decsions I ever made in my life!

I eat lots of fruits and vegies.  In this hot weather I make a huge salad of mixed greens (organic including spinach), red onion, cucks and tomatoes from my garden, all colors of peppers, chick peas and dark red kidney beans (from cans salt free), avocado and a few black olives, toss with EVO and balsamic vinegar then add pieces of barbecue chicken on top - Delicious!

@qualitygal

DSIL loves to grill out and makes grilled Brussels sprouts that has me liking them very much!

Here is what I do to stay AIP (autoimmune protocol) compliant and I lose weight this way too.

I use Dr. Amy Meyers paleoptotein and drink 1 per day (22 g/protein) It makes me feel "satiated". Then I add in tuna every day and salmon 2/week.

Be sure to measure out your oil.  It is easy to get carried away and use far far too much of it!   Oil is very calorie dense and if you go dribbling it on everything, you will gain weight.
