I'd like to stick my toe in to vegetarian cooking. I'm looking for a cookbook that has simple, easy recipes.
Any suggestions?

Go to the Vegetarian Times website. They have info you can download for ""beginners.""

I have purchased a few books here and there, and overall end up being disappointed. Now, I browse my local libraries (online) reserve the books and have them delivered to my nearest library.
My best recommendation is to look online. Food Babe has some interesting, easy recipes, for example. I copy and format them into a file I can easily read (visually impaired here) then print it, or bluetooth to my tablet, and go shopping for the ingredients. Just the thought of quinoa, kale, lemon juice etc. is making me HUNGRY!
Another road to take in browsing is the vegetarian Indian route. Once you buy (what seems like tons) the seasonings, you are set for wonderful lentil soups, curries, etc, so tasty and really simple once you get over the number of spices.
Here is a non-Indian, basic cucumber salad I picked up off the net:
Cilantro Cucumber Salad
This makes a quick, fresh relish that tastes nice on its own or as a tangy, crispy addition to a sandwich. It also tastes great mixed with leftover cold rice or quinoa as a quick lunch.
1 cucumber, thinly sliced and quartered
1 cup (25 g) chopped fresh cilantro
2 T rice vinegar (I would use lemon juice, as I feed someone who hates vinegar)
Salt and pepper, to taste
In a bowl, mix all the ingredients together. Serve at room temperature or chill before serving. Yield: 4 small servings

I have too many veggie books...but usually trust my intuition whenever I "cook"! What kind of veggie are you? It would depend on which book you might want to buy. Here are a couple of suggestions: 1)go to Amazon and put in vegetarian cookbooks and read the reviews, 2) go to you library/bookstore (Engine 2 has some great recipies and I'll bet your library has a copy) and see what appeals to you, and 3) go on the internet (even Whole Foods posts tons of yummy recipies)- there are lots of free recipies. Have a wonderful time exploring this lifestyle!
