Hello all, just checking in....I'm 10 days into WFPB and doing pretty well!
I have the energy to continue walking an hour every morning before breakfast, am 14lbs down and having no hunger or digestion or sleep issues. It's been interesting trying nondairy Daiya cheeses and alternative sour creams, yogurts (liking the strawberry and cherry but Silk is creamier), even pizza (not horrid but I wouldn't buy it again) but have not been able to find the coconut mango dressing from Christines Kitchen(?) anywhere. Granted, we live in a tiny coastal town with few stores, but oddly, a Natural Grocer has come to a neighboring town and I find other cool stuff there.
I'm getting a little bored with my own ideas for meals, so I need to watch more you tube shows for some better ideas. I do love a hot veggie like spinach or heated left-overs or pea soup atop my salads. I'm really full after a baked potato covered with warm chili beans or warmed broccoli and brown rice on it.
For some reason, I wasn't thinking I could have broccoli with rice AND beans on a salad or potato, like thats too many carbs...but thats waaay filling for hours.
A plain russet potato with Daiya sour cream with chives is good but dry. Maybe I should sprinkle veggie broth over it or salsa.
I need to remember fresh fruits like pineapple or apricots, instead of the usual apple or blueberries in oatmeal or salads (which I adore) to change things up.
I'm excited to try the fried grated/frozen hashbrowns folded over some sauted veggies.
I've baked sweet potatoes and russets and a wide variety of beans but forgot how much I like Yukon Golds and dutch babies. Must try different colored potatoes too, even tho the purple color is a little off-putting!
Split Peas, Lentils, Potatoes and Wild rice are great but I just bought red lentils for the first time, to attempt Dal. Wish me luck!
Oh, and I also love the look of mason jars filled with varieties of seeds and nuts, nutritional yeast...if I didn't see it through the glass, I'd forget to add them to dishes.

Fast Forward to the 4:00 min mark to begin.
Itโs very basic.
Just reiterates fat & animal products are the 2 main causes of insulin resistance...due to intromyocellular lipids (fat in the muscle cells).
Remove the fat & insulin sensitivity improves.

@sidsmom I just wanted you to know that I am appreciative of your posts and the information you share, not to mention the inspiration you provide! Honestly, I think your posts have been my first exposure to the WFPB way of eating ๐ณ. I have passed on the information to several family members who are either all in, or greatly minimizing their consumption of animals and their products. Thank you ๐!
