This is from Vegan For Everybody by Americas Test Kitchen
1/4 cup water
2 tbsp lemon juice
6 tbsp tahini
2 tbsp olive oil (I use water instead)
1-15 oz can chickpeas
1 garlic clove ( I use 2 or 3)
1 tsp smoked paprika
1/2 tsp salt ( I skip this)
Pinch of cayenne pepper ( I use a squirt of siracha)
Combine water & lemon juice in bowl. whisk tahini & oil in another bowl.
process chickpeas, garlic, paprika, salt, cayenne pepper in food processor.
While machine is running, add lemon juice mixture, then tahini mixture untill smooth.
Sprinkle with toasted pine nuts & scallion, drizzle with oil.( I don't do that part)

I would love to eat a plant based diet daily, not only for health reasons, but budget wise. The problem is my DH. He is 69 and a meat and potatoes guy set in his ways. I know meat is not healthy, nor can we afford to buy it, but trying to figure out what to feed him is a major chore. He won't eat cereal or brown rice. He expects eggs, bacon, and hash browns daily for breakfast.

Going PB for financial reasons is the easiest!
If he likes potatoes & hash browns, cook the food he loves
but make it double the amount to edge out the animal product.
Be sure & cook without oil/butter/animal product.
But...health needs to begin with your plate. If the change for health
is your strong โwhyโ, thereโs no time like the present to get started.

Cook the meals you desire. Pick a,
-Grain
-Bean
-Vegetable
-Sauce/Spice
...then add the meat you husband desires. Once you begin to see health results & budget savings, that will be his incentive to eat more plant based.
There are so many suggestions online for hearty soups, stews which use beans, squashes...HTH!

@sidsmom...thanks for the info. I think with DH, much of it is psychological. I have been using less and less meat when I make spaghetti or stew, and he doesn't complain.

Keep track of the amount of $$ youโre saving in case doubt sets in.
In terms of health, take a baseline weight/blood pressure measurement
and track that over the upcoming months.
Whatโs that saying?

This is the time of year where $$ will definitely be on your side.
Holidays always spawn HUGE produce sales in the grocery store.
Sweet potatoes, russets, corn, acorn squash, butternut squash,
green beans, onions...you have a feast for days for little money!

As many have figured out...
Thanksgiving dinner is basically a feast of Sides!
Potatoes & gravy, green beans, squash, corn, bread,
sweet potatoes, cranberry sauce, etc! All that would be plenty,
but how about a lentil loaf for leftovers? And a chocolate pie
for dessert? All these dishes are so simple to make.
They also can be made healthy & inexpensive!

This is so cool!
Have a feeling Dr. McDougall has had a strong influence on
many, many notables throughout the years. Donโt know if
Mr. Lee was veg or not, but obviously there was a point in his life
where he bettered his health by Dr. McDougallโs teachings.
