One of a zillion plant based ‘cheeze’ recipes on the web.
I’ve made this...so creamy, so good. You could replace nuts
with tofu or seeds....there’s even a ‘cheeze’ recipe made w/ oats.
Everyone has these ingredients...whip up a batch of cheese tonight!

DH and I spent 8 months walking an hour daily and following the Atkins/Keto diet (minus the holidays that we bombed) and were largely successful as far as weight loss goes. Our blood work, though, showed some oddities along with high LDL. I've never been a big meat eater and thats a lot of this plan, plus salads. This is a spendy diet with all the meats, eggs,bacon.... more importantly, I worried about the toll all that meat was taking on our hearts. I was ready for a change.
High School DD's were trying to follow a Vegetarian lifestyle, so we bought skads of veggies and quickie frozen veggie burgers, boxed individual rices, pastas for them. I slid easily into their Vegetarian ways, as I'd eaten vegetatian years before, and began making family sized meatless meals....much to the males in the family's despair, as I normally do all the grocery shopping and cook most of the meals

Stradling two eating plans is hard and frustrating....
Enter the Whole Foods Plant Based lifestyle. We (Yes, former meat/eggs/oil/pizza/chips DH is shockingly on board) have only healthy eating now, nothing to worry about hurting our bodies. Cooking is on a learning curve.
It has been about 5 days now, of clean animal free eating. The transition for both of us has been surprisingly easy...I feel lighter, no indigestion no headaches no expensive, greasy meats, it just feels right for my body and the animals, plus I've lost 5 lbs!
For now, we have 3 eating plans in the household. I have resistence from those family members who are used to animal based foods, vegetarians who eat fruit, dairy and pastas, and WFPB people. I'm finding their transition to my lifestyle is slow going, even though they now get meat maybe 1-2X a week, and the flour based foods/snacks have been replaced with walnuts, almonds, pumpkin seeds, sunflower seeds, all fresh and dried fruits, popcorn, melons, pommagranite seeds...
Typical breakfast is oatmeal with peanut butter, chia seeds, almonds, berries, rice milk
Typical lunch is salad with loads of veggies, apples, beans, lime juice, wild rice, seeds, nutritional yeast
Typical dinner is split pea soup with carrots onion and celery, large side of broccoli
Water is basically all we drink, sometimes Pom.
