I like getting the roasted red peppers from the olive bar. I made chicken bruschetta the other night and used some of the peppers.

I would guess those olives are HEAVILY doused with additives to make them look pretty since they're exposed to the air. Also...I would be curious to see if the oil/liquid they are sitting in is actually olive oil. I would guess a cheaper oil would be snuck in there to reduce costs, but not affect taste.
Olives are so good on their own...why muck it up with all the extra oil they've been sitting in?
"Healthy addition"? I would question that.

I love olives and yes, they are a healthy thing if eaten sparingly---after all that's where olive oil comes from. I buy all the time to use in my recipes. You have to watch as the salt content is high as well as any oil they are preserved in. I usually rinse or pat the extra oil off. I put them in alot of things but as a flavoring so don't use a ton in the dish.

I love the olive bar, I made an antipasti platter for my DH holiday party, exclusively with olives and pepperjews and cubed cheese from the Fresh Market Olive bar

I like olives a lot but see little point to an olive 'bar'. The big joke is that at my local Safeway, they included an olive bar, but no salad bar... Go figure. Seems to me this is another supermarket trend that will probably fade away.

I buy all my olives from a bar. I love the variety they offer and like to buy a very small amount at one time.
Olives are fine in the diet in small amounts. I have no idea what they suggest now, but WW used to say 3 olives were like one fat (teaspoon size). That was back when they recommended a tablespoon of fat/day. I often threw 3 olives onto my dinner salad as one of those 3.

We eat olives every day. Every store around here has olive bars. Olives contain monounsaturated fats, which are very healthy. However, they are also very high in sodium due to the brine in which they are processed.
I know a teen who works in the deli at a grocery store. She said that olives in the olive bar are in the natural brine right out of the container in which they come. People are allowed to "sample" the olives before purchasing. She said the only problem with the olive bar (like salad bars) is that some people try to grab things with their fingers. She said that they watch closely, and there are signs posted...but they can't be there all the time. There is usually a sneeze shield at olive bars, but people should be using the tongs.

I believe large importers and/or food brokers aid with the cost of the bar itself. If you question the additives, perhaps the deli people will show you the container in which the olives came.
