@SouthernBee Just another thought... A world reknown heart surgeon Dr. Esselstyn has an informative book Prevent and Reverse Heart Disease. He has a cookbook that goes with this book (I own both, but I would think you could check them out at the library), he has saved many lives, highly recommend. (His son, Rip Esselstyn has a cookbook that has a vegetable lasagna that is killer.)
Edited: Just checked and you can find Rip's vegetable lasagna recipe online...free.

@phoenixbrd : DH has an enlarged aorta and he is been watched each year. He said his pants are tighter and just told him that I will not purchase a larger size. Just getting ready to research your other recipe suggestions. The other day, I made a great northern bean soup in the instant pot and thought it was good, at least DH took some of the beans out and just ate them😲. Southern Bee

@SouthernBee Sounds as if you are staying tough....sometimes love/caring means softly taking a stance. So glad you are taking excellent care of yourself...you are moving in the right direction and I'll bet your success will influence your husband. Change is challenging, but your actions will serve as motivation. Healthy meals can be so tasty that I'll bet your husband will eventually get on board. Good work and I know will succeed with your goals.

@Misplaced Parisian: Wow! Thank you. Just checked Olive Tomato and signed up for emails. Love the shopping list and very excited. I have always roasted eggplant and a variety of squash in olive oil, plus DH likes this and looking forward to more vegetable sheet pan meals to make it easier on me. Southern Bee
