Mediterranean Diet need quick and easy recipes

Heart doctor told DH best diet Mediterranean, no books suggested just search  on line. I have done this and read a lot of book reviews. Very confused plus DH very picky eater and will not try different foods, therefore I will need to make the changes and hope seeing results will  get him to change. Limited transportation and not able to go to library for books. Need to go grocery shopping on Thursday. I am physically slow, will need easy prep and cook meal plans, Suggestions greatly appreciated. Southern Bee

There is no need to eat "different" on a Mediterranean diet, just include lots of fresh produce, less red meat, fish, and olive oil.  You can incorporate more veggies/fruits and lots of salads.  I just googled the diet and lots of free recipes came up, but really not necessary.  Anytime you include more whole fresh produce in your diet, you are eating healthier.  It is very easy and nothing exotic.

@SouthernBee, Is it possible for you to order a cookbook online from Amazon or Barnes and Noble?  A beginner’s cookbook re this diet could be helpful.  Perhaps it would help you with the whole concept of the diet and cooking techniques.  For instance, cooking healthy foods in new ways.  We eat very little red meat, and enjoy fish, chicken, and veggies roasted in the oven.

@phoenixbrd : Last two weeks before doctor appointment, have cooked soups with more vegetables and less meat, but DH wanted grilled cheese sandwiches with it. Didn’t like that I used whole wheat bread. Cooked a variety of different beans and greens for a vegetable plate dinner but DH still wanted corn bread and smoked sausage with the meal. I understand your suggestions and trying to use what I have and I am really struggling. I need help with making menus and grocery shopping. I want to clean house of junk food and have better stocked pantry. Southern Bee

@PamfromCT : I have for last two hours been reading cookbooks and reviews on Amazon. Trying to find a good kindle book to read now - for quick information and suggestions to grocery shop on Thursday to at least get a week supply of groceries. I am also looking for Instant pot recipes and found some that I would like but DH will probably refuse to eat, he is a good man but hard to change. Somone doesn’t understand portions control and afraid of being hungry. Southern Bee

@SouthernBee   You are doing great....more veggies, legumes, produce.  Sounds as if hubby isn't on board with a healthier lifestyle.  Smiley Frustrated  Is there anything that he likes that would support his health, maybe including lots of meals that crossover and upping the healthier foods.  I am so sorry you are having these issues.  For me, I would quietly continue to make healthy meals....but that is a decision you have to make for your home.  I know you have had the discussion regarding you are concerned about his health. I wish you the very bestHeart

Sounds like your DH is not happy with having to change his diet. If it were me he would get what I serve if he still wanted the other stuff he can cook it himself. I would explain I am not the one who isn’t going to make you sicker. You do that yourself.  Tough love.

@SouthernBee   I just read your last post and realize your husband might be feeling like he will go hungry with the new emphasis on health....nothing could be further from the truth but sometimes people don't understand that when you are eating nutrient dense food you able able to eat more of it (high in nutrients, but low in calories = able to have more).  There are some really delish recipes free online from Oh She Glows and The Minimalist Baker ....that are hearty and healthy and Instant Pot friendly, take a look at the bean chili recipes.  Check out the corn chowder recipe (I make in the Instant Pot) from High Carb Hannah  it is so creamy (without the cream) and filling yet nourishing and I bet your husband couldn't resist.  You might want to include baked potatoes/sweet potatoes with the meals so he feels satiated.  I make baked potatoes with mushroom gravy (using low sodium veggie broth/plant milk)  that is healthy and filling.   Take a look at three bean chili recipes and lentil stews that you can make in the IP.  At the same time you can include fresh salads that will up the produce content.  These are just a few ideas that might help.  I understand your struggle and wishing you and your husband the best of health.

@phoenixbrd : Great suggestions and truly appreciate your time and help. In January my doctor told me to do something and next appointment in July. Have had numerous discussions with DH. Just finished with income tax and ready to get serious. I have made a few changes with better food choices, portion control, eating dinner no later than 4pm, light healthy snacks at night and results are 5 pounds gone- but a small start. Today, will start using recumbent bike starting with a few minutes in the morning and afternoon until strength built up. Just on Amazon reading reviews for The Complete Mediterranean Cookbook by America Test Kitchen- kindel $19.99. Will check out your recipe suggestions. Southern Bee

@godi : Yep love the man but he doesn’t cook. I can have food cooked in the refrigerator but he will order a pizza before making a plate and putting it in the microwave. I am determined to do something. DH just went out with a friend and I told him- do not bring me anything back. My breakfast will be oatmeal with cinnamon, Greek yogurt with
