I would probably use quinoa instead of cous cous, for GF cooking (and sub the flour for GF flour).

Batch cooking. Prepare all the ingredients in a jar.

Dump in pressure cooker, add water, set time...boom...done.

Couscous patties.

You could replace the eggs w/ 'flax eggs' & eliminate the oil

without any taste changes. Easy Peasy.

I can't eat this, but it looks good!  You would have to edit the fish oil, of course, for a vegan recipe.

You could eliminate the fish sauce, vegetable oil, sesame oil.

And for really low fat, replace the peanuts for PB2 powder.

I would sprinkle sesame seeds on top for a finishing garnish

and to get that desired sesame flavor.

PIcked up some baby purple potatoes today and they are purple through and through and delicious!.

 

They also look really good (and taste really good) next to a bunch of green veggies.
