Holy moly....I stopped it at 23 minutes to write this. She has summarized every webinar, YouTube video & book in 23 minutes! Something new...gut bacteria craving certain, specific foods. Interesting. And I didn't realize she is a volunteer for nutritionfacts.org...and works at TrueNorth...so she's really, really McDougall. Wow. She's amazing. Like the way she 'don't even talk about the protein'. Ha. Now back to the video....later

I was thinking of you today. I found these at Target-
and decided to use up veggies to make a veggie lasagna. It's in the oven now, hopefully ready for lunch. I am one of THOSE people who doesn't really use recipes, as I was trying to use up what is in the fridge. It does have fresh spinach, shredded red peppers and shredded yellow squash, with a mix of marinara and tomato sauce. I blended one can of cannelini beans, fresh garlic, seasonings, and some mozzarella shreds in the Vitamix to make the "ricotta" layer. I know it's not VEGAN, but I thought I would share my find about the noodles in case you're looking to mix it up, gluten free style.

I found a brown rice pasta that is delicious (I was so surprised!) by Jovial. Got some yesterday when I was shopping as it was on sale and I figured I'd take advantage.
I like it better than many "regular" pastas.

The white stuff on top is a mix of mozzarella and a can of white beans, blended together in the Vitamix with water, basil, and fresh garlic. You could probably use tofu/beans or Sidsmom's fake cheese sauce to avoid the cheese.
It was really good! I cut it into 6 servings- one for lunch, one to freeze, and the rest for BF and me to eat tomorrow.

Oh my gracious! I love listening to his story.
Words/phrases we PB people have been saying for some time:
- 'Reverse' Diabetes (T2)
- "Cleveland Clinic" (He was referring to Dr. Caldwell Esselstyn)
- "How Not To Die" (a new PB classic!)
- '..same diet' (to heal other ailments)
Love how when the Dr said he was going to be on
diabetes meds forever, he said "No I'm Not!!"

Then 3 months later, w/ improved #s, slapped a full bottle
of meds on his Drs desk..."Never took your medicine!"
Double spunky.
I thought his name sounded familiar. FOK Facebook page did a story on him last Fall. What a beautiful example of what food can do. I know my posts, on other threads, makes it sound like Low Fat Whole Foods Plant Based eating is a cure-all for everything but...it kinda/sorta is, and he confirmed that.

the food they eat. No one has talked about that but it makes

P.S. Came across a video yesterday that I started to watch but it's lengthy and I had to leave it. Going back now since I have some time before dinner (purple potatoes! brussels sprouts! cauliflower! carrots!) All Naked As the Day They Were Born
The video (on youtube) is of cardiologist, Dr. Robert Ostfeld, and it's called, "Confessions of a Reformed Cardiologist" - I am going to go see if I can watch the rest of it now.

I just watched Dr. Ostfeld's presentation. Good stuff.
A lot of the data is from Dr. Caldwell Esselstyn's wonderful

which really focuses on heart disease reversal.
Dr. Esselstyn is the father of Rip Esselstyn (Engine 2).
Ann (wife) and Jane (daughter) do many presentations,
as well. All uber athletic. Cool family in upstate NY.
