Yay, @StillRachB !!  Yes, you are right at the point of Keto Flu.  Getting the electrolytes in was smart thinking.  In a pinch, if you have any pickles in the fridge, drink some of the juice.  The magnesium in it will help you feel better and reduce any cramping you might have.  Go easy on the MCT oil too.  Too much too soon and you will be in the bathroom a lot.

After following the keto WOE, I finally got up the nerve to get on the scale the other day.  28 lbs. down in 2 months!

I strongly recommend watching that film "The Magic Pill".  Yes, I did start this because I want to lose weight and have a lot to get rid of.  After watching the film, DH and I were so impacted by it that this is going to be our permanent WOE.  IMO, people can't dabble in keto.  It's so specific in tracking macros and watching ingredients that you're either all in or you're not doing it so don't say you are.  Know what I mean?  I hope you have great success!  The first week or two are probably the most difficult, but getting the cabinets and fridge cleaned out of the saboteurs and getting your mindset right goes a long way in your success.

@JeanLouiseFinch I know what you mean! I’m tracking macros closely (keto.app) and in addition to my perfect keto electrolyte capsules, I’m drinking a serving of Ultima in my water daily now. Feeling great! We took my son to a local farm today and got him some homemade ice cream after seeing the animals. I love their ice cream. Today, I had absolutely no craving for it, and didn’t even give it a second thought as I sat next to my little guy and helped him eat it. The old me would have sabotaged my diet to get my own, sneak a bite of his, or lick my fingers just to get a taste. Not today....the thought of doing any of those things never crossed my mind. I was filled with joy of seeing my son watch the animals and enjoy his treat. Crazy as it sounds, I think keto is helping me disconnect food from my own emotions so I can feel and experience what’s truly going on.

@StillRachBYay for you!!  Not crazy at all.  We're experiencing the same, looking at food in a whole new way.

I feel the same as you! It has crushed my cravings!  It's nice to have so much control over what I eat and how I feel about food.

@Grouchomarx right? I thought I’d be craving pasta and sweets terribly. To the contrary! Protein and fat is very satisfying. I eat a meal and I’m good until my next meal. Previously, I was on a constant carb and sugar roller coaster. I’d eat that stuff, be full, but still want more.

I’ve experienced the same thing. People wonder how I can go years (and it’s been years now) without bread. The truth is that it doesn’t even look like food to me anymore -and it isn’t so that’s good! I just FEEL so good now that nothing is worth compromising that.

And I completely agree that the first week or two are the hardest but getting rid of anything that can sabotage you is so helpful. I also approach this as the way I’ll eat for the rest of my life. It doesn’t feel at all like a diet to me. It’s transformed my relationship with food and, as someone who has struggled my entire life with food, insulin resistance and weight issues, that’s a big deal. Along with the excellent advice above about electrolytes at the beginning I’ll add that it really helped me to eat whenever I was hungry at first. My goal was to get fat adapted and that takes a while but boy, once you are, it’s really great!

I have used the Xanthum Gum.  It works well and doesn't take much.  I bought mine at a local health food store but have also seen it at a local Amish store.  My husband can't tell the difference when I make gravy.

Thanks for sharing, @marky .  I've used it in a recipe or two so far, but not to actually make gravy.  That's good to know, though, for the next time I make a roast.  Does it measure the same as flour for that purpose, or do you just eyeball it?

So, earlier this week I was talking with one of our kids, he's planning to visit this weekend.  I always try to surprise him with a favorite meal or I'll ask if he has any requests.  Last time he was here I told him about chaffles, he just laughed at the name.  Well, when we talked the other day and I asked about dinner he said, "How about cheeseburgers on those cheese waffle things?"  This time I laughed.  I'm probably going to make cauliflower "mac" and cheese too.  We'll see how it goes over with him.  DH and I love it!
