I've never heard of it either. I was thinking maybe it's something you put on pancakes, but doesn't sound like it. How do you even pronounce Yacon anyway? Does it rhyme with "bacon" or more like "yack-on"...like makes you yack?
I drink aloe vera juice and that stuff is bad enough, think I'll pass on this.

Well, I don't know about the syrup but back in 2008 there was a lot of discussion on a low-carb message board (LCHF) about yacon powder being used as a replacement for molassas. It's very low on the Glycemic Index (1). Some people were adding 1/4 tsp. to a cup of granular artificial sweetener to make brown sugar. I suppose the syrup could be used also for that.
