I have a friend who recently had back surgery and on top of that has gotten very ill. Some of us from my Church are coordinating meals to take to her and her family. However, it has to be gluten free, soy free, and nut free. If any of you have any recipes you could share with me that would meet those needs, I would greatly appreciate it. TIA
P.S. I did post this on the Recipes forum too, but thought this might be a good place to ask too.

In terms of the entree, any baked or roasted meat should be fine, as long as you don’t thicken the gravy with flour. You could pair this with steamed veggies and a salad to round out the meal. My BIL has celiacs disease and my sister’s commented on how carefully she has to read labels, even on supposedly gluten-free items. Dessert’s trickier, so maybe a fresh fruit salad.

How about that old standby - chicken rice soup.

Baked chicken with roasted red potatoes. Season with some olive oil, a bit of fresh garlic, but of paprika and salt and pepper.
